This medium-grained white rice from the 1999 California harvest, cooks up plump, moist, and tender. The kernels are coated with corn syrup, which makes them shiny and helps retain moisture, but has no affect on the taste. The texture is stickier than long-grain rice, but fluffier than short-grain, making this versatile rice for a variety of Asian dishes, from sushi to fried rice.
